This Chickpea and Avocado Salad is my go-to lunch when I need something fast, healthy and satisfying. I pile it with fresh garden vegetables and finish it with a drizzle of extra virgin olive oil and either lemon juice or apple cider vinegar depending on my mood. It’s simple, bright, and filling — perfect for quick weekday meals or for packing as a light, protein-rich lunch.

I made this version after returning from a trip to Sunriver, Oregon — a beautiful place that had me craving something fresh and bright. I used tomatoes from my garden and some pantry staples to throw this together in minutes. Chickpeas are a staple in my pantry, and when paired with avocado and crisp greens they create a satisfying texture and flavor contrast that keeps me full well into the afternoon.
How to keep avocados from browning
- To slow browning on cut avocado, squeeze a little lime or lemon juice over the exposed flesh. The acid helps preserve the color for a few hours.
- If you’re storing half an avocado, leave the pit in and press plastic wrap or an airtight cover close to the surface of the flesh to reduce air exposure. If the top layer darkens slightly, simply scrape it away with a spoon to reveal the fresh green fruit underneath.
Helpful tips and suggestions
- A salad spinner is useful for rinsing and drying lettuce and hearty herbs quickly; dry greens help the dressing cling better and avoid soggy texture.
- Leftover chickpeas can be used in other quick salads, soups, or roasted for a crunchy snack. They’re versatile and keep well once drained and refrigerated.
- Adjust the olive oil and vinegar to taste. Start with a light drizzle and add more if needed. Fresh lemon juice is an excellent bright alternative to apple cider vinegar.
- For added flavor, toss in chopped fresh herbs such as parsley, cilantro or basil. A pinch of crushed red pepper or a sprinkle of cumin can also add a warm note.
Chickpea Avocado Salad
This quick salad combines canned chickpeas, sliced avocado, fresh cherry tomatoes, cucumber and crisp greens. Ready in about 15 minutes, it makes a nutritious lunch for one or two.
Prep: 15 mins · Total: 15 mins · Yield: 2 servings · Serving size: 1 salad
Ingredients
- 2 cups chopped greens such as romaine
- 1 cup canned chickpeas, rinsed and drained
- 2/3 cup diced cucumber
- 2/3 cup halved cherry tomatoes
- 2 ounces sliced avocado (about 1/2 small avocado)
- 2 tsp extra virgin olive oil
- 3 tsp unfiltered apple cider vinegar or fresh lemon juice
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Divide the chopped lettuce among two bowls. Distribute the rinsed chickpeas, diced cucumber and halved cherry tomatoes evenly between the bowls.
- Top each salad with slices of avocado. Season with kosher salt and freshly ground black pepper to taste.
- Drizzle each portion with about 1 teaspoon of olive oil and 1.5 teaspoons of apple cider vinegar or lemon juice (adjust to preference). Toss gently so the avocado stays intact and the dressing coats the ingredients.
- Serve immediately. If making ahead, keep the avocado separate and add it just before serving to retain the best color and texture.
Variations and serving ideas
This salad is a great base for variations. Add cooked quinoa or farro for extra bulk, mix in crumbled feta or goat cheese for creaminess, or top with toasted seeds or chopped nuts for crunch. Swap the romaine for baby spinach or mixed greens, and try different herbs such as chopped parsley, basil or cilantro to change the flavor profile.
Storage
Store any leftover components separately in airtight containers in the refrigerator. Prepared greens with dressing will wilt over time, so keep the dressing separate if you know you’ll be storing the salad for more than a few hours. Avocado is best sliced just before serving for peak color and texture.
