Ingredients
- 1/2 cup raw pistachios, divided
- 1/4 cup raw cashews
- 10 pitted Medjool dates
- 1/4 cup canned or homemade pumpkin purée
- Pinch of sea salt
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
Instructions
- Place 1/4 cup of the pistachios in a food processor fitted with a metal blade. Process until the nuts resemble coarse sand. Transfer this portion to a small bowl and set aside for rolling.
- Add the cashews and the remaining 1/4 cup pistachios to the food processor and pulse until finely ground.
- Add the Medjool dates, pumpkin purée, pinch of sea salt, pumpkin pie spice, cinnamon and vanilla extract. Process until the mixture is evenly combined and smooth. Taste and adjust spices if desired.
- Using a spoon or your hands, scoop and roll the mixture into 9 equal balls (about golf-ball size).
- Roll each ball in the reserved coarse pistachios to coat the outside. Serve immediately or store.
Storage & serving
Store the energy balls in an airtight container in the refrigerator for up to 7 days, or freeze for up to 3 months. If frozen, allow a few minutes at room temperature before serving. These are great alongside coffee, as a quick pre- or post-workout snack, or tucked into a lunchbox.
Variations & substitutions
- Nut-free: Substitute sunflower seed butter and toasted sunflower seeds for the cashews and pistachios.
- Chocolate version: Add 1–2 tablespoons unsweetened cocoa powder to the mix, or dip finished balls in melted dark chocolate.
- Spice adjustments: Increase pumpkin pie spice or cinnamon for a stronger fall flavor; add a pinch of ginger or nutmeg if you like.
- Sweeter or less sweet: Use fewer dates for less sweetness, or add a teaspoon of maple syrup for extra sweetness and moisture.
Notes
For best texture, use soft Medjool dates. If your dates are dry, soak them for 10 minutes in warm water, drain well and pat dry before processing. If your food processor struggles, process in batches and scrape down the sides as needed.
