How to Make Cuban Picadillo

Cook the meat and vegetables, then simmer briefly so the flavors meld. The instructions below are written for a stovetop method and yield a tender, well-seasoned picadillo.

  1. Brown the meat: Season the ground beef with salt and pepper. In a large sauté pan over high heat, brown the meat, breaking it into small pieces with a wooden spoon. When no longer pink, drain any excess liquid from the pan.
  2. Prepare the vegetables: While the beef cooks, chop the onion, garlic, bell pepper, tomato and cilantro.
  3. Sauté the vegetables: Add the chopped vegetables to the beef and cook over low heat until they soften, about 5 minutes.

Ingredients

  • 1/2 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tomato, chopped
  • 1/2 red bell pepper, finely chopped
  • 2 tbsp cilantro, chopped (optional)
  • 1 1/2 lb (about 700 g) 93% lean ground beef
  • 4 oz (about 1/2 can) tomato sauce
  • 1/4 cup water
  • Kosher salt and fresh ground black pepper, to taste
  • 1 tsp ground cumin
  • 1–2 dried bay leaves
  • 2 tbsp pitted green olives or alcaparrado (capers can be used)
  • 2–4 tbsp olive brine (juice from the olives)

Instructions

  1. Season the beef with salt and pepper. Brown it in a large sauté pan over high heat, breaking it into small pieces. Drain any excess liquid once the beef is no longer pink.
  2. While the meat cooks, chop the onion, garlic, bell pepper, tomato and cilantro.
  3. Add the vegetables to the pan and cook over low heat until softened, about 5 minutes.
  4. Stir in the olives and 2–4 tablespoons of olive brine, cumin, and bay leaf. Add the tomato sauce and 1/4 cup water, mix well, reduce heat, cover and simmer for about 20 minutes.
  5. Taste and adjust seasoning as needed. Remove bay leaf before serving.
