Steak and Cheese Sandwiches with Onions and Mushrooms are one of my favorite meals—perfect for lunch or a casual dinner. This lighter version mixes meaty mushrooms with thin-sliced steak for extra flavor and texture. It’s satisfying without being heavy, and you can customize the cheese to your preference: Swiss, provolone, mozzarella, cheddar, or American all work beautifully.

Steak and Cheese Sandwiches
I have a confession: steak and cheese sandwiches are my weakness. Growing up, my mom made the best version, and that’s the benchmark I still chase. This recipe captures the same comfort food appeal while keeping the calories lighter by mixing mushrooms with the steak and removing a small portion of the bread from each roll. The result is a flavorful sandwich that still feels indulgent.

If you already have leftover steak prepared with onions and mushrooms, this sandwich is a great way to repurpose it. Alternatively, prepare the steak and onions fresh and assemble immediately. To make the meal more substantial, serve the sandwich with a bowl of soup—creamy cauliflower or zucchini soup pairs especially well with these flavors.
Steak and Cheese Sandwiches with Onions and Mushrooms
Summary: Thin-sliced beef cooked with onions and mushrooms, placed on a hollowed-out piece of French bread or a baguette, topped with thin slices of cheese and warmed until the cheese melts. Quick, flavorful, and easy to adapt.
Prep time: 10 mins | Cook time: 20 mins | Total: 30 mins
Yield: 4 servings | Serving size: 1 sandwich
Ingredients
For the steak
- 1/2 lb thin-sliced beef round (sandwich steaks)
- 1/2 large onion, sliced into rings
- 1/2 tsp olive oil
- 8 oz sliced mushrooms
- Olive oil spray (optional, for cooking)
- 1/2 tsp garlic powder
- Salt and freshly cracked black pepper, to taste
For the sandwich
- 12 oz French bread or baguette, cut into 4 pieces (about 3 oz each)
- 12 ultra-thin slices mozzarella or provolone cheese (about 3 slices per sandwich)
Instructions
- Prepare the steak, onions and mushrooms. If you don’t have a premade skillet steak, cook thin-sliced beef with the sliced onion and mushrooms in a hot skillet with 1/2 teaspoon olive oil. Season with garlic powder, salt and pepper. Cook until the onion is soft and the mushrooms are browned and the steak is cooked through.
- Preheat the oven to 425°F (or set the broiler to low if you prefer). A higher heat will melt the cheese quickly and toast the bread slightly.
- Slice each piece of bread open lengthwise and scoop out about 1 ounce of the soft interior from each piece to make room for the filling and reduce the carbohydrate content per sandwich.
- Divide the steak, onions and mushrooms evenly among the four pieces of bread. Top each portion with three thin slices of cheese (or enough to cover the filling).
- Place the assembled sandwiches on a baking sheet. Heat in the oven or under the broiler just until the cheese melts and begins to bubble—about 2–3 minutes. Watch closely under the broiler to avoid burning.
- Remove from the oven, close the sandwiches, slice if desired, and serve hot.
Tips and Variations
- Swap cheeses: Swiss, provolone, mozzarella or even a sharp cheddar change the flavor profile—use what you enjoy or have on hand.
- Make it milder: If you prefer softer onions, cook them a few minutes longer to caramelize and sweeten them before adding the mushrooms and steak.
- For a lighter version, use whole-wheat baguette and thin-sliced low-moisture mozzarella, and continue to remove a small portion of the bread’s interior to reduce carbs without sacrificing sandwich size.
- To add brightness, finish with a small handful of arugula or a squeeze of lemon immediately before serving.
Notes
Nutritional information accounts for approximately 1 ounce scooped out of each bread piece. Scooping the bread reduces calories and carbs while keeping the sandwich large and satisfying.
