Ingredients

For the steak
  • 1/2 lb thin-sliced beef round (sandwich steaks)
  • 1/2 large onion, sliced into rings
  • 1/2 tsp olive oil
  • 8 oz sliced mushrooms
  • Olive oil spray (optional, for cooking)
  • 1/2 tsp garlic powder
  • Salt and freshly cracked black pepper, to taste
For the sandwich
  • 12 oz French bread or baguette, cut into 4 pieces (about 3 oz each)
  • 12 ultra-thin slices mozzarella or provolone cheese (about 3 slices per sandwich)

Instructions

  1. Prepare the steak, onions and mushrooms. If you don’t have a premade skillet steak, cook thin-sliced beef with the sliced onion and mushrooms in a hot skillet with 1/2 teaspoon olive oil. Season with garlic powder, salt and pepper. Cook until the onion is soft and the mushrooms are browned and the steak is cooked through.
  2. Preheat the oven to 425°F (or set the broiler to low if you prefer). A higher heat will melt the cheese quickly and toast the bread slightly.
  3. Slice each piece of bread open lengthwise and scoop out about 1 ounce of the soft interior from each piece to make room for the filling and reduce the carbohydrate content per sandwich.
  4. Divide the steak, onions and mushrooms evenly among the four pieces of bread. Top each portion with three thin slices of cheese (or enough to cover the filling).
  5. Place the assembled sandwiches on a baking sheet. Heat in the oven or under the broiler just until the cheese melts and begins to bubble—about 2–3 minutes. Watch closely under the broiler to avoid burning.
  6. Remove from the oven, close the sandwiches, slice if desired, and serve hot.

  • Swap cheeses: Swiss, provolone, mozzarella or even a sharp cheddar change the flavor profile—use what you enjoy or have on hand.
  • Make it milder: If you prefer softer onions, cook them a few minutes longer to caramelize and sweeten them before adding the mushrooms and steak.
  • For a lighter version, use whole-wheat baguette and thin-sliced low-moisture mozzarella, and continue to remove a small portion of the bread’s interior to reduce carbs without sacrificing sandwich size.
  • To add brightness, finish with a small handful of arugula or a squeeze of lemon immediately before serving.
