  • 1 tablespoon Cajun seasoning (or Creole seasoning)
  • 1 pound large shrimp, peeled and deveined (about 24 shrimp)
  • 3 ounces cooked turkey or chicken Andouille-style sausage, very thinly sliced
  • 1 medium zucchini (about 8 ounces), sliced into 1/4-inch rounds
  • 1 large red bell pepper, seeded and cut into thin strips
  • 1 1/2 cups corn kernels (fresh, frozen, or canned and drained)
  • 1/4 cup chopped fresh Italian parsley leaves
  • 1/4 cup chopped fresh basil leaves
  • 1/4 cup dry white wine (such as Pinot Grigio) or a splash of low-sodium chicken broth
  • 2 tablespoons olive oil (about 1/2 tablespoon per packet)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat the oven to 425°F (if cooking immediately). In a medium bowl, combine the Cajun seasoning with a pinch of salt and pepper. Add the shrimp and toss to coat evenly.
  2. Lay out four large pieces of heavy-duty aluminum foil (about 10 x 18 inches each) on a flat surface.
  3. Divide the sliced sausage, zucchini, red bell pepper, and corn evenly among the four foil pieces, placing the vegetables in the center of each piece of foil.
  4. Top the vegetables in each packet with about six seasoned shrimp. Sprinkle each with 1 tablespoon chopped parsley and 1 tablespoon chopped basil.
  5. Drizzle each packet with 1 tablespoon dry white wine (or broth) and about 1/2 tablespoon olive oil. Fold the foil to form a sealed packet, leaving a little air space so steam can circulate. If preparing ahead, refrigerate or freeze the sealed packets at this stage.
  6. To bake fresh packets, place them on a rimmed baking sheet and bake at 425°F for about 13 minutes, or until the shrimp are cooked through and vegetables are crisp-tender.
