Skinnytaste Dinner Plan — Week 10
Happy Sunday! This is week 10 of sharing my weekly dinner plans since the launch of The Skinnytaste Meal Planner. I plan dinners for the week on the weekend and then make a shopping list before heading to the supermarket. Meal planning keeps the week organized, reduces stress around dinner time, and helps me save time and money at the store.

This week has been unusually busy. With Weight Watchers updating their program, I’ve been converting older points values to SmartPoints across many recipes — a time-consuming task that has kept me at my computer longer than I like. I’ve already converted content from 2015 and 2014 and I’m continuing through the archive.
All that extra work has been stressful, and I’m reminding myself to slow down: schedule more downtime, unplug from the computer, and focus on family time so I can recharge. Meal planning is one small way I can reduce daily friction. It keeps me sane, helps me organize the week, and minimizes time spent wandering supermarket aisles. We’re a family of four, so leftovers are often the next day’s dinner or packed for lunches.
How I Approach Meals
Breakfasts are usually quick and simple: eggs and fruit, smoothies, or avocado toast. I aim to do big grocery shopping on Sundays, but you should do whatever works for your schedule. When a dinner produces a lot of food, we often eat leftovers the next night — or my daughter takes them to school in a thermos. If you follow these weekly posts, you’ll see repeated favorites and rotating meals that keep family dinners interesting and manageable.
If you want to review previous weekly plans, you can search for Dinner Plan Week 1 through Week 9 in the recipe archive. These weekly menus help build a practical, repeatable routine for family dinners and make it easier to plan around busy weeks or special events.
This Week’s Menu
Below is the dinner plan for Week 10. I’ve included a few family favorites — Picadillo is a big hit in our house and it makes enough for tacos one night, served over rice the next, and then packed for lunches.
- Monday: Spinach Tortellini Soup
- Tuesday: Crock Pot Picadillo Tacos
- Wednesday: Leftover Picadillo over Rice
- Thursday: Mediterranean Boneless Pork Chops
- Friday: Bangin’ Good Chicken Salad (I make Madison’s portion without the sauce)
- Saturday: Cajun Chicken Pasta
- Sunday: Dinner at Mom’s
