Homemade chicken soup with veggies and Acini di Pepe

Ingredients (Serves 4)

  • 4 boneless skinless chicken thighs (about 1 lb), trimmed of fat
  • 1/4 teaspoon kosher salt, plus more to taste
  • 1 teaspoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup sliced carrots (peeled)
  • 3 cloves garlic, minced
  • 4 cups chicken bone broth or low-sodium chicken broth
  • 2 bay leaves
  • Black pepper, to taste
  • 2 cups baby spinach
  • 1/2 cup Acini di Pepe (about 2.5 oz)
  • Grated Parmesan, optional for serving

Instructions

  1. Season the chicken thighs with 1/4 teaspoon kosher salt and a pinch of black pepper.
  2. Heat the olive oil in a medium nonstick pot over medium heat. Add the onion, celery, carrots, and garlic and sauté until the vegetables are softened, about 4–5 minutes.
  3. Add the seasoned chicken, chicken broth, bay leaves, and a pinch (about 1/8 teaspoon) of black pepper. Bring to a boil, then cover and reduce the heat to medium-low. Simmer until the chicken is tender and easily shreds with a fork, about 25 minutes.
  4. Remove and discard the bay leaves. Transfer the chicken to a cutting board and shred coarsely with two forks, then return the shredded chicken to the pot.
  5. Add the Acini di Pepe and cook according to the package directions until tender. Stir in the baby spinach during the last minute of cooking until wilted.
  6. Taste and adjust seasoning with additional salt or pepper as needed. Serve hot, garnished with grated Parmesan if desired.
