Garlic Roasted Cauliflower with Toasted Asiago Bread Crumbs

This simple, flavorful recipe serves about six as a side. The cauliflower roasts quickly at a high temperature to develop color while staying tender inside. The topping—crispy breadcrumbs sautéed with onion, garlic and a hint of fresh thyme—adds texture and a savory finish. Use asiago or another hard cheese you like, and swap herbs to suit your meal.

Ingredients

  • 1 1/2 lb head of cauliflower, cut into florets (about 6 heaping cups)
  • 5–6 cloves garlic, smashed
  • 2 tbsp olive oil (for the cauliflower)
  • Salt and freshly cracked pepper, to taste

For the topping:

  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 1 large clove garlic, crushed
  • 1/3 cup seasoned breadcrumbs
  • 2 tbsp shredded asiago cheese (or parmesan)
  • 1 tsp fresh thyme (or another fresh herb)

Instructions

  • Preheat the oven to 450°F (230°C).
  • Spread the cauliflower and smashed garlic on a large baking sheet. Drizzle with 2 tablespoons olive oil and season with salt and pepper; toss to coat evenly.
  • Roast the cauliflower until tender and browned at the edges, about 22–25 minutes, tossing every 6–8 minutes so it browns evenly.
  • While the cauliflower roasts, heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the diced onion and sauté about 3 minutes, stirring occasionally.
  • Add the crushed garlic to the pan and sauté until the onions are golden.
  • Reduce the heat to low and stir in the breadcrumbs. Cook, stirring frequently, until the crumbs turn light golden, about 3–5 minutes—be careful not to burn them.
  • Remove the skillet from the heat, stir in the fresh thyme, and allow the breadcrumb mixture to cool slightly. Stir in the asiago cheese.
  • When the cauliflower is done, transfer to a serving dish and top with the toasted breadcrumb and asiago mixture. Serve warm.

Notes and Tips

  • For extra crispness, spread the cauliflower in a single layer and avoid overcrowding the pan.
  • Swap asiago for parmesan or pecorino if preferred. A pinch of lemon zest stirred into the breadcrumbs before serving adds bright contrast.
