  • 6 cups romaine lettuce, shredded
  • 15 oz black beans, rinsed and drained
  • 1 cup grilled corn kernels (fresh, grilled or roasted)
  • 2 tbsp red onion, divided
  • 2 tbsp chopped cilantro
  • Juice of 1/2 lime
  • 1 seedless cucumber, diced
  • 2 cups diced tomatoes
  • 1 ripe Hass avocado, diced
  • 1 cup reduced-fat Mexican blend shredded cheese

Instructions

  1. Rinse the cooked shrimp and chop into large bite-sized pieces. Toss the shrimp with a pinch of kosher salt, chipotle chili powder to taste and 1 tablespoon fresh lime juice. Set aside to let the flavors meld.
  2. Prepare the black bean and corn mixture: combine the drained black beans, grilled corn kernels, half of the red onion, chopped cilantro, the juice of 1/2 lime and salt to taste. Mix gently so the corn and beans remain intact.
