- 3 lb boneless pork shoulder (blade roast), lean with excess fat trimmed
- 6 cloves garlic, crushed
- 2–3 tbsp Walkerswood Jerk Seasoning (or your preferred jerk seasoning)
- 1/2 tsp coarse salt
- 1 lime, juiced
- 1/2 cup fresh orange juice
For the Caribbean salsa:
- 1 Haas avocado, diced
- 2 large ripe mangos, peeled, pitted and coarsely chopped
- 1 1/2 tbsp chopped red onion
- 1–2 tbsp chopped fresh cilantro
- 2–3 tbsp fresh lime juice
- Salt and pepper, to taste
Instructions
- Make small slits in the pork with a sharp knife and push half of the crushed garlic into the slits.
- Combine the remaining garlic, jerk seasoning and coarse salt. Rub the mixture all over the pork. If your jerk seasoning is spicy, adjust the amount to taste—2 tablespoons will be milder, 3 tablespoons more assertive.
- Place the pork in a large container, pour the lime and orange juice over it, cover and refrigerate for 5 hours or preferably overnight. Turn the pork occasionally so the marinade coats all sides.
- The next day, transfer the pork and any marinade into the slow cooker. Cook on LOW for about 9 hours, until the pork is very tender and shreds easily.
- When done, remove the pork and shred it with two forks. Drain and reserve the cooking liquid from the slow cooker.
- Add the shredded pork back to the slow cooker. Add about 1 cup of the reserved liquid to the pork, then taste and adjust with salt and pepper. Let it cook an additional 15 minutes to allow the flavors to marry.
