  • 1 cup green enchilada sauce
  • 1 medium avocado, diced

Instructions

  1. Preheat the oven to 350°F. Pour about 1/3 cup of enchilada sauce across the bottom of a 9 x 12-inch baking dish and set aside.
  2. Whisk together the egg whites, water and a pinch of salt and pepper in a medium bowl.
  3. Lightly coat a large nonstick skillet with cooking spray and heat over medium heat. Pour approximately 1/4 of the egg-white mixture (about 1/2 cup) into the skillet, swirling to evenly coat the bottom.
  4. Cook until the egg sets, about 2 minutes. Flip and cook the other side until set, about 1 more minute. Transfer to a plate and repeat to make a total of six egg “tortillas.”
  5. In a separate medium nonstick skillet, warm the olive oil over medium heat. Add the scallions and cook 2–3 minutes until fragrant but not browned.
  6. Add the diced tomato and chopped cilantro, season with salt, and cook about 1 minute until the tomato begins to soften.
  7. Stir in the spinach and chopped green chiles, cooking about 5 minutes until heated through. Season to taste with salt and pepper.
  8. Remove the filling from the heat and stir in 1/2 cup of the grated cheese, mixing until combined.
  9. Divide the spinach mixture among the egg-white “tortillas,” about 1/3 cup per tortilla. Roll each tortilla and place seam side down in the prepared baking dish.
  10. Top the rolls with the remaining enchilada sauce and the remaining cheese. Cover with foil and bake until hot and the cheese is melted, about 20–25 minutes.
  11. Serve topped with diced avocado and additional scallions as garnish.
