  • 2 cups cubed butternut squash
  • 1 small onion, sliced into ½ moons
  • 1 tablespoon olive oil
  • 1 small (4-ounce) Hass avocado, sliced
  • Olive oil spray for cooking eggs
  • 4 large eggs
  • Kosher salt and freshly ground black pepper, to taste
  • 2 cups cooked brown rice
  • ¼ cup chopped pecans

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a large sheet pan, toss the broccoli, butternut squash, and onion with the olive oil, salt, and pepper until evenly coated.
  3. Spread the vegetables in a single layer and roast for 20–25 minutes, or until they are crisp-tender and lightly browned.
  4. While the vegetables roast, heat a medium skillet over medium-low heat and lightly spray with olive oil.
  5. Crack the eggs into the skillet one at a time, leaving space between them. Season each with a pinch of salt and pepper. Cover and cook until the whites are set and yolks reach your desired doneness.
  6. To assemble, divide the cooked brown rice and roasted vegetables evenly among 4 bowls. Top each bowl with about 1 ounce of avocado, one cooked egg, and 1 tablespoon of chopped pecans.
