Instructions

  1. Place the rinsed beans, three cloves of peeled garlic, 8 cups water, and a few sage leaves in the crock pot. Cover and set to HIGH for about 4 hours, or until the beans are soft. Do not add salt at this stage, as salt can slow bean softening.
  2. While the beans cook, preheat your oven to 400°F (200°C).
  3. Place the remaining garlic cloves in the center of a 7×7 inch square of aluminum foil. Drizzle the garlic with the olive oil and sprinkle a little salt over it.
  4. Fold the foil to seal it tightly and roast for 25–30 minutes, until the garlic is soft and golden. Remove and set aside until the beans are done.
  5. When the beans are tender, stir in the bouillon until dissolved. Carefully transfer a portion of the beans, some cooking liquid, and the roasted garlic to a blender. Blend until smooth and return the purée to the crock pot.
  6. Repeat blending additional portions until the soup reaches the texture you prefer. Alternatively, use an immersion blender directly in the crock pot for a quicker finish.
  7. Taste and adjust seasoning with kosher salt and white pepper. Add more sage leaves or a drizzle of olive oil if desired.
  8. Serve hot, garnished with fresh sage leaves, a dusting of white pepper, and reserved roasted garlic cloves if you like a little texture and extra flavor on top.
