2. Cook on LOW for 3 to 4 hours, or longer if needed; if your slow cooker does not switch to warm you can safely leave it on low for up to about 6 hours. The chicken should be very tender and easy to shred with two forks.

3. Remove the chicken and leave the sauce behind in the slow cooker. Shred the chicken with two forks and set aside.

4. In a small bowl, dissolve the cornstarch in the remaining water, then stir this slurry into the sauce. Cover and cook on HIGH for about 15 to 20 minutes until the sauce thickens slightly.
