Ingredients

For the meatballs:

  • 3 tablespoons fat-free milk
  • 1 lb 93% lean ground beef
  • 1/2 cup grated Pecorino Romano cheese
  • 1 large egg, beaten
  • 2 garlic cloves, crushed
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

For the sauce:

  • 1 teaspoon olive oil
  • 3 garlic cloves, smashed
  • 1 (28-ounce) can crushed tomatoes with basil
  • 1 bay leaf
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the broccoli rabe and blanch for 1 1/2 to 2 minutes. Drain well and let cool in a colander. Finely chop about 3/4 cup of the florets and leaves (approximately 3 3/4 ounces) for the meatballs; reserve the remaining greens to use as a side or garnish.
  2. In a medium bowl, toss the bread cubes with the milk. Let sit for about 10 minutes, tossing occasionally, until the bread is fully moistened. If any dry spots remain, add milk 1 tablespoon at a time until even.
  3. Add the ground beef, chopped broccoli rabe, grated Pecorino Romano, beaten egg, crushed garlic, salt, and pepper to the bowl. Gently mix the ingredients with clean hands until just combined—avoid overworking the mixture.
  4. Form the mixture into 15 meatballs, about 1/4 cup each. Place the meatballs on a large baking sheet. Broil on the second rack from the top until the tops are golden, about 8–10 minutes; this step gives a better crust but is optional. If you prefer, you can pan-sear the meatballs briefly instead.
  5. In a small skillet, heat the olive oil over medium heat. Add the smashed garlic and cook until it turns golden on both sides, then remove the garlic from the oil.
  6. Pour the crushed tomatoes into a 6-quart slow cooker. Add salt and pepper to taste, the bay leaf, and the garlic-infused oil (and garlic if you like a stronger garlic flavor). Gently nestle the meatballs into the sauce, cover, and cook on low for 4–6 hours or on high for 2–3 hours. The meatballs should be cooked through and tender.

Serve the meatballs and sauce over pasta, toasted Italian bread, or a bed of wilted greens. For a lighter presentation, pile them over more sautéed broccoli rabe. A dollop of ricotta and extra grated Pecorino Romano on the top brightens the dish and adds creaminess.
