Happy Saturday — welcome to Week 14 of my weekly dinner plans. Each week I share a straightforward, family-friendly menu to help you plan meals, simplify shopping and save time in the kitchen. This sample week includes SmartPoints next to recipes since I’m following Weight Watchers right now. If you use The Skinnytaste Cookbook and track SmartPoints, I’ve listed the points where applicable to make planning easier.

Meal planning can make grocery shopping faster, reduce mealtime stress and help you use leftovers smartly. My breakfasts are typically quick and simple — eggs with fruit, a smoothie, or avocado toast. We’re a family of four, so when a recipe yields extra, it either becomes someone’s lunch the next day or turns into an easy leftover dinner.

Weekly Dinner Menu

Monday: Dad’s Creamy Cauliflower Soup (2 SP) with Garlic Parmesan Fries (6 SP). A cozy, low-fuss soup paired with crispy baked fries makes for a comforting Monday night.

Tuesday: Beef tacos — I adapt a turkey taco lettuce-wrap recipe to use lean ground beef instead. Use your preferred taco shells or lettuce wraps and top with fresh lettuce, tomato, a squeeze of lime and a bit of cheese or salsa.

Wednesday: Turkey Meatball and Spaghetti Soup (5 SP). This soup is a satisfying midweek meal: savory meatballs, tomatoes, and a few strands of pasta simmered together for a bowl that feels like a warm hug.

Thursday: Parmesan-Crusted Turkey Cutlets (4 SP) with Sautéed Baby Zucchini (2 SP). Lightly breaded cutlets and quick-cooked zucchini keep this meal both flavorful and fast.

Friday: Healthy Baked Fish Sticks with Lemon Caper Sauce (6 SP) served with a house salad inspired by recipes in The Skinnytaste Cookbook (3 SP). Baked fish sticks offer crunch without deep frying, and a bright lemon-caper sauce lifts the flavors.

Saturday: Dinner out — a great opportunity to relax and enjoy a meal away from the kitchen.

Sunday: Filipino Adobo Chicken (6 SP) served with brown rice. This savory classic is one of my favorites — tender chicken braised with tangy and savory seasonings — and it makes generous leftovers for lunches or another easy dinner.

Tips for the Week

  • Prep vegetables and any salad greens in advance to speed weeknight assembly.
  • Save leftover soup or adobo chicken for lunches or reheat for a no-effort dinner the next day.
  • When recipes call for breadcrumbs or panko, keep both on hand; panko gives extra crunch for baked coatings.
  • Substitute ingredients you already have in your pantry to reduce waste — for example, use any favorite white fish if Alaskan cod is not available.

MEAT & FISH:

  • 1 lb lean ground beef
  • 16 oz 99% lean ground turkey

  • 1 lb Alaskan skinless cod fillet (or other white fish)
  • 8 skinless chicken drumsticks (on the bone)

DAIRY & EGGS:

  • Butter
  • Freshly grated Parmesan cheese
  • Shredded cheddar cheese

  • Fat-free plain Greek yogurt

Quick Marinara Ingredients:
Olive oil, garlic, a 28 oz can of crushed tomatoes (such as Tuttorosso), bay leaf, oregano, fresh basil, salt and freshly ground pepper. These basic pantry items make a fast, flavorful sauce to toss with pasta or to use in meatball dishes.
