Ingredients

  • 20 oz 93% lean ground turkey
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp bread crumbs
  • 1/4 tsp allspice
  • 1/4 tsp ground coriander
  • 1/4 tsp paprika
  • 1/4 tsp chili powder

Instructions

  1. In a large bowl combine the ground turkey, minced onion, garlic, chopped parsley, bread crumbs, allspice, coriander, paprika, chili powder, and salt and pepper. Mix gently until evenly combined—avoid overworking the meat to keep the texture tender.
  2. Divide the mixture into twelve heaping 1/4-cup portions. Shape each portion into a log-shaped oval (kofta shape). If you prefer, form them into round meatballs or patties instead.
  3. Arrange the shaped kofta on a baking sheet and refrigerate for at least 30 minutes. Chilling helps the kebabs hold together and allows the flavors to meld.
  4. If using wooden skewers, soak them in water for at least 30 minutes before threading to prevent burning on the grill.
  5. Preheat the grill to high heat. Carefully insert a skewer lengthwise through each formed kofta, leaving space at both ends for turning.
  6. Grill the kebabs covered over indirect heat for about 15 minutes, then move them to direct, low flame and finish cooking for 3–4 minutes on each side, turning occasionally, until the meat is cooked through and no longer pink inside. Cooking time can vary depending on skewer thickness and grill heat.
  7. Remove from the grill and let rest a few minutes before serving.
