Ingredients

  • 1 tsp butter
  • 4 pork chops (about 22 oz with bone, trimmed of visible fat; 1 inch thick)
  • 1/2 tsp salt
  • Freshly ground pepper, to taste
  • 3 tbsp chopped onion
  • 3/4 cup chicken stock or broth
  • 1 tbsp Dijon mustard
  • 2 tbsp chopped fresh herbs (parsley and chives recommended)

Instructions

  1. In a large skillet, melt the butter over moderately low heat.
  2. Season the pork chops with salt and fresh ground pepper.
  3. Raise the heat to medium and add the chops to the pan. Sauté for about 7 minutes on the first side, then turn and cook until the chops are browned and reach your desired doneness—about 7–8 minutes more for 1-inch bone-in chops. Remove the chops and keep them warm on a platter.
  4. Add the chopped onion to the pan and cook, stirring, until soft, about 3 minutes.
  5. Add the chicken stock and bring to a boil, reducing until the liquid measures about 1/2 cup (approximately 2–3 minutes).
  6. Stir in the Dijon mustard, chopped fresh herbs, and about 1/8 tsp freshly ground pepper. Taste and adjust seasoning as needed.
  7. Pour the sauce over the pork chops on the platter and serve immediately.

Notes

Food & Wine notes that pork chops may still have a slight pink center at safe cooking temperatures; trichinosis is no longer a common risk at modern standards, and pork is considered safe at around 150°F. I typically use an instant-read thermometer and cook to about 160°F for a familiar, well-done result. Avoid overcooking to keep the chops juicy.
