This lighter version keeps all the sweet banana flavor with far less fat by mashing ripe bananas into a simple batter and pan-frying small fritters with a light touch of buttery spray. They are almost like tiny banana pancakes—crispy at the edges, tender inside—and they pair beautifully with a small scoop of low-fat ice cream or a dusting of powdered sugar and cinnamon. Ingredients

  • 3 medium, very ripe bananas
  • 2 tablespoons sugar
  • 2 large eggs, beaten
  • 3 tablespoons all-purpose flour

Instructions

  1. Mash the bananas in a bowl until mostly smooth. Small lumps are fine and add texture.
  2. Add the sugar, beaten eggs, flour and vanilla extract to the mashed bananas. Stir gently until combined into a spoonable batter. Fold in the 1/2 teaspoon cinnamon.
  3. Preheat a large skillet over low heat. Using low heat helps the fritters cook through without burning on the outside.
  4. When the skillet is warm, lightly spray it with the buttered-flavored cooking spray. Using a tablespoon, drop small mounds of batter (about 1 tablespoon each) into the pan, spacing them so they do not touch.
  5. Cook the fritters on the first side for about 1 to 2 minutes, until the edges set and the bottom is lightly golden. Carefully flip each fritter and cook the other side until set and golden, about another 1 to 2 minutes.
  6. Transfer cooked fritters to a plate and keep warm in a low oven while you finish the rest. Repeat with remaining batter, spraying the pan as needed.
  7. To serve, place 4 fritters on a plate and sprinkle with a little powdered sugar and additional cinnamon. Serve warm, with a small scoop of low-fat ice cream or plain yogurt if desired.
