Ingredients

Instructions
- In a food processor combine the grated Parmigiano Reggiano, fresh lemon juice, garlic clove, Dijon mustard and anchovy fillets.
- Process for 15 to 20 seconds until the ingredients are finely combined and the garlic and anchovies are well blended into the cheese and lemon.
- Add the extra virgin olive oil and Greek yogurt, then process for another 10–15 seconds until the dressing is smooth and creamy. Taste and adjust seasoning—add more lemon for brightness, more cheese for savoriness, or a pinch of salt and black pepper if needed.
Notes
Refrigerate the dressing in an airtight container for up to 4 days. The flavors meld over time, so it often tastes even better after a few hours in the fridge. If the dressing separates slightly, whisk or shake before serving. For anchovy-free versions, simply omit the anchovies and increase the cheese or add a teaspoon of caper brine for additional umami.
