Recipe: Yogurt Sheet Pan Pancakes with Berries

Ingredients

  • 1½ cups all-purpose unbleached flour
  • ½ cup white whole wheat flour

  • 1½ cups plain yogurt (0% or regular)
  • ¾ cup milk
  • 6 tablespoons water
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted and cooled slightly
  • 2 teaspoons vanilla extract
  • 1½ cups fresh or frozen mixed berries (blueberries, raspberries, blackberries)

Instructions

  1. Position a rack in the middle of the oven and preheat to 425°F (220°C).
  2. Spray a rimmed 18″ x 13″ sheet pan with cooking spray. Cut parchment to fit the bottom (about 16″ x 20″), place it in the pan, and spray the parchment and the sides lightly with cooking spray.
  3. In a medium bowl, whisk together the dry ingredients: all-purpose flour, white whole wheat flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, whisk the wet ingredients: yogurt, milk, water, eggs, melted butter, and vanilla until smooth.
  5. Pour the wet ingredients into the dry ingredients and whisk gently until just combined—do not overmix. A few lumps are fine.
  6. Gently fold in the mixed berries so they’re distributed without crushing.
  7. Pour the batter into the prepared sheet pan and spread evenly with a spatula. Tap the pan a couple of times on the counter to settle the batter.
  8. Bake for 15 to 17 minutes, rotating the pan halfway through baking, until the pancakes are set and lightly golden.
  9. Let cool in the pan for about 5 minutes. Place a large cutting board over the pan and invert to flip the pancakes onto the board. Cut into 16 squares and serve immediately with your choice of toppings.

  • To store: Cool completely, then keep in an airtight container or zip-top bag in the refrigerator for up to 4 days.
  • To freeze: Cool completely and transfer to an airtight container or freezer bag. Freeze in single layers if possible.
  • To reheat from the fridge: Microwave on a microwave-safe plate for about 40 seconds, flipping halfway through.
