I’m thrilled to finally reveal the cover and concept for my second cookbook, Skinnytaste Fast and Slow: Knockout Quick-Fix and Slow Cooker Recipes. This book is designed for busy home cooks who want delicious, healthy meals without fuss—whether you prefer set-it-and-forget-it slow cooker dinners or meals you can make from start to finish in 30 minutes or less.
Since my first cookbook, I’ve heard countless requests for more slow cooker recipes and super-quick dishes. I listened and filled Skinnytaste Fast and Slow with approachable, flavor-forward recipes that make everyday cooking easier and more enjoyable. The book contains 140 recipes in all: 60 designed for the slow cooker and 80 that take 30 minutes or less. That range gives you plenty of options to get a homemade, satisfying meal on the table any night of the week.
Below is a sample of what you’ll find inside the cookbook—thoughtfully curated dishes that are nutritious, family-friendly, and easy to prepare.

Every recipe includes clear nutritional information provided by registered dietitian Heather K. Jones, so you can easily track calories, macronutrients, and make choices that support your health and weight goals. Many recipes are vegetarian or gluten-free, and freezer-friendly options are noted with helpful icons to make meal planning more convenient. The icons make it fast to find recipes that match your dietary needs or lifestyle.
This cookbook also features more photography than my first book—120 full-color images captured by photographer Helene DuJardin. The photos bring the recipes to life, showing finished dishes and serving suggestions so you know what to expect and can plate with confidence.
Whether you’re stocking your slow cooker for the week or putting together a quick weeknight dinner, the book is organized to make meal selection easy. Recipes include step-by-step directions, prep and cook times, serving sizes, and tips for substitutions and storing leftovers. Many recipes are designed to be flexible—swap vegetables, adjust proteins, or scale portions to suit your family.
A few highlights you’ll appreciate:
- Balanced, flavor-forward recipes that prioritize fresh ingredients and simple techniques.
- Clear nutrition panels for every recipe, developed with a registered dietitian.
- Icons for vegetarian, gluten-free, and freezer-friendly recipes to speed up meal planning.
- Convenient options for batch cooking and make-ahead meals.
- Stunning photography to inspire plating and presentation.
