- 14 oz can light coconut milk
- 1/2 lime, juiced
Instructions
- Heat the olive oil in a medium pot over medium-low heat. Add the diced red bell pepper and sauté until softened, about 3–4 minutes.
- Add the white parts of the scallions, 1/4 cup of the chopped cilantro, the minced garlic, and the crushed red pepper flakes. Cook for about 1 minute until fragrant, stirring to prevent burning.
- Pour in the diced tomatoes (with their juices), the light coconut milk, and 1/2 teaspoon kosher salt. Increase the heat to bring the mixture to a gentle boil, then reduce the heat, cover, and simmer for about 10 minutes to allow the flavors to meld and the sauce to thicken slightly.
- Add the shrimp to the simmering sauce and cook 5–6 minutes, or until the shrimp are opaque and cooked through. Avoid overcooking to keep shrimp tender.
- Remove from heat and stir in the lime juice. Taste and adjust seasoning as needed.
- Divide among four bowls (about 1 to 1 1/4 cups per serving). Garnish with the reserved scallion greens and the remaining cilantro. Serve immediately with brown basmati rice or crusty bread to soak up the broth.
