Ingredients

For the bruschetta:

Instructions

  2. Add the chopped tomatoes, minced garlic and chopped basil to the bowl. Stir gently and adjust seasoning. Cover and refrigerate; stir in the diced mozzarella just before serving so the cheese stays pleasantly soft.
  3. Prepare the zucchini: Grate the zucchini and place it in a clean kitchen towel or several paper towels. Squeeze firmly to remove as much liquid as possible — this prevents soggy patties.
  4. In a large bowl, combine the ground turkey, drained zucchini, breadcrumbs, grated garlic, grated red onion, and salt and pepper. Mix gently until just combined; avoid overworking the meat so the burgers stay tender.
  5. Divide the mixture into five equal portions (about 5 oz each) and form thin, flat patties. Flattening them helps them cook through quickly and evenly.
  6. Heat a large skillet over medium-high heat until hot. Lightly spray the skillet with oil. Add the patties, reduce heat to medium-low, and cook until browned, about 4 minutes per side. Flip once and cook another 4 minutes, watching closely so they do not burn.
