Ingredients

  • 1 1/2 pounds peeled and deveined medium shrimp

  • 1 tbsp extra-virgin olive oil
  • 3 to 4 dried chilies, roughly chopped (or 1/2–1 tsp crushed red pepper flakes)
  • 5 garlic cloves, crushed or thinly sliced
  • Juice of 1 lemon
  • 3 tbsp chopped fresh parsley

Instructions

  1. Season the shrimp with salt and pepper to taste.
  2. Heat a large nonstick skillet over medium heat.
  3. Add 1/2 tablespoon of the olive oil and half of the chopped dried chilies to the pan; cook for 1 to 2 minutes to release their aroma.
  4. Increase the heat to medium-high. When the skillet is hot, add half of the shrimp in a single layer. Cook undisturbed for about 1 1/2 minutes so they sear.
  5. Flip the shrimp and cook until opaque throughout, about 1 minute more. Transfer this first batch to a plate.
  6. Add the remaining 1/2 tablespoon of oil and the remaining chilies to the skillet; cook 1 to 2 minutes.
  7. Add the remaining shrimp and cook, undisturbed, for about 1 1/2 minutes. Turn the shrimp over, add the garlic, and cook until the shrimp are opaque throughout, about 1 minute.
  8. Return the first batch of shrimp to the skillet and toss everything together so the garlic, chilies and shrimp are evenly combined. Remove the pan from the heat.
  9. Squeeze the lemon juice over the shrimp and add the chopped parsley. Toss gently to coat.
  10. Serve immediately with crusty whole wheat bread and a simple green salad, or spoon over baby greens for a light main course.
