  • 2 cups cooked quinoa

  • 1/4 cup crumbled feta (preferably the brined-style feta)
  • 12 smashed Castelvetrano or other green olives

Instructions

To make the chicken:

  1. Cut the chicken thighs into 1-inch pieces if not already cut.
  2. In a large bowl, whisk together the Greek yogurt, olive oil, red wine vinegar, garlic, dried oregano, turmeric, salt, and red pepper flakes (if using).

To assemble the bowls:

  1. Divide the cooked quinoa among 4 bowls, about 1/2 cup each.
