Crock Pot Balsamic Pork Roast

I love making pork in the slow cooker because it’s so forgiving and turns out tender every time. This balsamic pork roast is cooked slowly with balsamic vinegar, a touch of honey and Worcestershire sauce for a subtle sweet-and-tangy finish. The meat falls apart when it’s done, making it perfect for serving as shredded pork for sandwiches, over mashed potatoes, or alongside roasted vegetables.

I often pick up a small pork roast when I see one at the market because it makes for a simple, satisfying dinner with minimal hands-on time. This version is adapted from a slow-cooker balsamic pork recipe and has become a go-to. Even people who don’t usually reach for balsamic flavors tend to enjoy the gentle tang and balance of sweet and savory notes in this dish.

Serving suggestions

This roast pairs beautifully with creamy sides like mashed potatoes or twice-baked potatoes, and bright, crisp vegetables such as roasted green beans or a simple salad. For a casual meal, pile the shredded pork onto rolls with a little of the cooking sauce and pickles for contrast. It’s also excellent mixed into rice or warm grain bowls with steamed vegetables.

Recipe: Crock Pot Balsamic Pork Roast

Ingredients (serves about 8)

  • 2 pound boneless pork shoulder roast (sirloin roast also works)
  • Kosher salt, to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes
  • 1/3 cup chicken or vegetable broth
  • 1/3 cup balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon honey

Instructions

  1. Season the pork all over with kosher salt, garlic powder and red pepper flakes. Place the roast into the slow cooker.
  2. In a small bowl or measuring cup, whisk together the broth, balsamic vinegar and Worcestershire sauce until combined. Pour the mixture evenly over the pork.
  3. Drizzle the tablespoon of honey over the roast.
  4. Cover and cook on high for 4 hours, or on low for 6 to 8 hours, until the pork is very tender and shreds easily with a fork.
  5. Using tongs or a slotted spoon, remove the roast to a cutting board or serving dish. Lightly shred the pork with two forks.
  6. Return the shredded pork to the slow cooker and ladle about 1/2 cup of the cooking sauce over the meat to keep it moist and flavorful. Keep on warm until ready to serve.

Tips and Variations

  • If you prefer a thicker sauce, transfer some of the cooking liquid to a small saucepan and simmer until reduced to your desired consistency, then pour back over the shredded pork.
  • Adjust the honey to taste — add a little more if you like a sweeter glaze or reduce it for a tangier finish.
  • For milder heat, omit or reduce the red pepper flakes. For extra depth, brown the roast briefly in a hot skillet before adding it to the slow cooker.
  • Leftover shredded pork is versatile: use it in tacos, sandwiches, salads, grain bowls, or as a topping for baked potatoes.

Storage and Reheating

Store leftover pork and sauce in an airtight container in the refrigerator for up to 3–4 days. Reheat gently on the stovetop over low heat, adding a splash of broth or water if needed to loosen the sauce. You can also reheat in the microwave in short intervals, stirring in between until warmed through. For longer storage, freeze the cooked shredded pork in a freezer-safe container for up to 2–3 months; thaw overnight in the refrigerator before reheating.

Notes

This recipe originally drew inspiration from classic slow-cooker balsamic pork preparations. The combination of balsamic vinegar, Worcestershire sauce and honey creates a nice balance of acidity and sweetness without overpowering the natural pork flavor. Adjust seasoning and sauce amounts to your preference, and enjoy the convenience of a flavorful, low-effort slow cooker meal.
