Ingredients
For the Slow Cooker
- 3 boneless skinless chicken breasts (about 24 oz total) or boneless thighs
- 1/2 green bell pepper, sliced
- 1 tomato, quartered
- 1 carrot, peeled and chopped

- 3 bay leaves

Instructions
- In the slow cooker, place the chicken, sliced green pepper, quartered tomato, chopped carrot and half of the minced garlic. Add bay leaves and season lightly with kosher salt. Pour in just enough chicken broth to cover the chicken and vegetables.
