Ingredients

For the Salad:

  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 5 medium ripe tomatoes, diced
  • 1/4 small red onion, sliced thin
  • 1 tablespoon chopped fresh basil
  • Kosher salt and freshly cracked black pepper, to taste
  • 6 cups baby arugula

For the Chicken:

  • 24 ounces boneless, skinless chicken breasts (about 3 breasts), sliced in half lengthwise to make 6 cutlets
  • 3/4 cup whole wheat Italian-seasoned breadcrumbs (substitute gluten-free crumbs if desired)
  • 1/3 cup grated Romano or Parmesan cheese
  • Juice of 1 lemon
  • 1 tablespoon olive oil
  • Kosher salt
  • Fresh cracked black pepper
  • Olive oil spray (an olive oil mister or light cooking spray)

Instructions

  • In a medium bowl, whisk together 1 tablespoon olive oil and 2 tablespoons balsamic vinegar to make a simple dressing.
  • Add the diced tomatoes, sliced red onion, and chopped basil to the dressing. Season with kosher salt and freshly cracked black pepper, then toss gently to combine. Set the salad aside for at least 10 minutes so the flavors meld and the tomato juices develop.
  • Preheat your oven to 450°F (230°C). Place a large baking sheet or shallow pan in the oven while it preheats so the surface gets hot — this helps the cutlets start crisping immediately when they hit the pan.
  • In a shallow bowl, combine the breadcrumbs and grated Romano (or Parmesan) cheese.
  • In a separate bowl, stir together the lemon juice, 1 tablespoon olive oil, and a generous pinch of freshly cracked black pepper.
  • Lightly pound each chicken breast half to an even thickness, about 1/4 to 1/2 inch, to make six cutlets. Pat the cutlets dry with paper towels and season both sides with kosher salt and pepper.
  • Dip each cutlet first into the lemon and oil mixture, then press it into the breadcrumb-cheese mixture so the crumbs adhere evenly.
  • Carefully remove the hot baking sheet from the oven and lightly spray it with olive oil spray. Arrange the breaded cutlets on the sheet, leaving space between them. Lightly spray the tops of the cutlets with olive oil spray for a golden finish.
  • Bake for about 15 minutes total, turning once halfway through, until the chicken is cooked through and the coating is golden brown. (Internal temperature should reach 165°F / 74°C.)
  • Remove the cutlets from the oven and immediately top each one with a generous handful of arugula and a spoonful of the tomato salad. Let the warm chicken slightly wilt the greens for the best balance of textures.

Serving Suggestions and Tips

Serve the Chicken Milanese with a squeeze of extra lemon, a light drizzle of additional balsamic if you like, or with a side of roasted vegetables, crusty bread, or a simple lemon pasta.
