Zucchini is one of my favorite vegetables—versatile, mild and easy to stuff. This turkey-stuffed version is a basic, reliable recipe that you can adapt in many ways. Below are a few variation ideas to spark creativity.

  • Mediterranean: Use seasoned ground lamb or turkey, add crumbled feta, chopped tomatoes, Kalamata olives and fresh mint for a bright, Mediterranean profile.
  • Sun-Dried Tomato & Goat Cheese: Sauté chopped sun-dried tomatoes with garlic and spinach, blend with goat cheese and herbs, then stuff and bake.
  • Breakfast Boats: Fill with scrambled eggs, diced peppers, mushrooms and cooked sausage, then top with cheese and bake.
  • Pizza-Style: Spoon in marinara and cooked Italian sausage, top with mozzarella and finish with fresh basil.

If you try a variation, share which one you liked best!

Stuffed Zucchini Ingredients

Key ingredients for these turkey-stuffed zucchini boats. Exact measurements appear in the recipe section below.

Stuffed Turkey Zucchini ingredients laid out on table.

  • Zucchini: Choose medium zucchini of similar size so the boats cook evenly. Scoop and chop the flesh to mix into the stuffing.
  • Butter: Used to sauté the onions, shallot and garlic for a rich base flavor.
  • Onion & Shallot: Finely diced for sweetness and depth; use extra onion if you don’t have a shallot.
  • Garlic: Crushed cloves provide a bolder garlic flavor than finely minced.
  • White Wine: A splash of dry white wine brightens and deglazes the pan (optional).
  • Ground Turkey: Lean ground turkey (about 93%) gives a tender, high-protein filling.
  • Egg White: Binds the mixture while keeping it lean.
  • Parmesan: Adds savory, nutty richness.
  • Chicken Broth: Poured into the baking dish to steam the zucchini while baking.
  • Breadcrumbs: Seasoned whole-wheat crumbs add a crisp top; use gluten-free if needed.
  • Spices: Paprika, garlic powder, Italian seasoning, salt and pepper to taste.

Cook the ground turkey until just done.
Fill zucchini boats
Spoon in the turkey mixture and top with breadcrumbs.
  1. Prep the zucchini: Cut each zucchini in half lengthwise and scoop out the flesh, leaving about 1/4″ of shell. Arrange the halves in a 9″ x 13″ baking dish and chop the scooped flesh into small pieces.
  2. Sauté aromatics: In a large skillet over medium-low heat, melt butter and cook the diced onion, minced shallot and crushed garlic for 2–3 minutes until softened and translucent.
  3. Cook zucchini and turkey: Add the chopped zucchini flesh, season with a pinch of salt and cook 2–3 minutes. Pour in the wine and reduce slightly if using. Add the ground turkey, season with salt and pepper, and cook until no pink remains, breaking it into small pieces (about 5 minutes). Stir in paprika, garlic powder and Italian seasoning and cook another minute, then remove from heat to cool slightly.
  4. Combine cheese and egg: When the turkey mixture is warm but not piping hot, stir in the grated Parmesan and egg white until evenly combined.
  5. Stuff the boats: Firmly spoon the turkey filling into each zucchini half and sprinkle the tops with seasoned breadcrumbs.
  6. Bake: Pour chicken broth into the bottom of the baking dish, cover tightly with foil and bake at 400°F for 35 minutes. If you want a browned topping, remove foil and broil 1–2 minutes at the end.

Variations and Tips

  • Swap vegetables: Use yellow squash instead of zucchini for a slightly sweeter flavor.
  • Different proteins: Substitute lean ground beef or crumbled Italian chicken or turkey sausage (omit additional salt if sausage is already seasoned).
  • Cheese options: Try Pecorino Romano or shredded mozzarella instead of Parmesan.
  • Gluten-free: Use gluten-free breadcrumbs or omit them and finish with a sprinkle of crushed nuts or seeds for crunch.
  • No cheese: Skip or use a dairy-free alternative.
  • Make ahead: Assemble the boats a day ahead and bake on the day you plan to serve; partially bake them (about 25 minutes) to shorten reheating time.
  • If topping doesn’t brown: Remove foil and broil for 1–2 minutes, watching closely to avoid burning.

What to Serve with Stuffed Zucchini

These zucchini boats are high in protein and satisfying on their own, but you can pair them with a starch or extra greens if desired. Consider rice pilaf, crispy roasted potatoes, a simple arugula salad or a hearts-of-palm salad to round out the plate.

How to Meal Prep Stuffed Zucchini

  • Prep and hollow the zucchini, cook the filling and assemble the boats up to a day in advance.
  • Refrigerate covered overnight and bake before serving.
  • If short on time, partially bake the assembled boats the day before and finish in the oven before dinner.

Storage

Refrigerate leftovers for up to 4 days or freeze for up to 3 months. Thaw in the fridge before reheating in the oven or microwave.

Zucchini FAQ

What can I do with a large zucchini?

Large zucchini work well in stuffed zucchini recipes—simply slice into boats and adjust portion sizes. Very large specimens can also be used in baked casseroles such as a giant zucchini Parmesan.

Do you leave the skin on zucchini when you cook it?

Yes. The skin is thin, tender when cooked, and adds texture and nutrients, so peeling is usually unnecessary.

Does zucchini get softer the longer you cook it?

Yes. Zucchini softens as it bakes; for zucchini boats, plan on about 35 minutes of covered baking at 400°F to reach a tender texture.
