They’re simple to assemble, look cheerful with a sprinkle of color, and taste like a nostalgic campfire treat—without the need for a fire. If you prefer, you can use store-bought marshmallows: I tested both and they both look great. Why these S’mores Pops work

The combination of semi-sweet chocolate and chocolate graham crackers gives these pops a deep chocolate flavor without being too sweet. Marshmallows add that classic toasted-s’mores texture and chew. Adding sprinkles before the chocolate fully sets gives a festive look—perfect for holiday gatherings. Because each pop is already portioned, they’re easier to serve than bars or traditional s’mores.

Tips before you start

  • Prepare all ingredients and tools (chocolate, graham crackers, marshmallows, sticks, sprinkles, wax paper) before melting the chocolate. Once the chocolate is warm, you’ll need to work quickly.
  • If you use store-bought marshmallows, cut large ones in half to better fit the pop size.
  • Work in batches if you’re making a lot—melt more chocolate as needed.
  • Chill the pops briefly in the refrigerator to speed up setting and keep them upright while the chocolate hardens.

Recipe

Ingredients

  • 1 oz Baker’s semi-sweet chocolate
  • 3 full chocolate graham crackers (Honey Maid or similar)
  • Sprinkles, for decoration
  • 6 homemade marshmallows, or 3 large store-bought marshmallows, cut in half
  • Popsicle sticks
  • Small clear baggies and ties for packaging (optional)

Instructions

  1. Break each chocolate graham cracker in half along the perforation to make six square pieces. Lay a sheet of wax paper on your work surface to place finished pops.
  2. Place the 1 ounce of semi-sweet chocolate in a small microwave-safe bowl. Microwave for 30 seconds, stir, then microwave in additional short bursts (5–10 seconds) as needed until smooth and just melted. Do not overheat.
  3. Using a small spatula or spoon, spread melted chocolate on one side of a graham cracker square. Place the coated cracker chocolate-side up on the wax paper.
  4. Dip the end of a popsicle stick into the melted chocolate, then press it into the center of the chocolate-coated cracker to secure it. Place another graham cracker square under the other end of the stick to keep it upright while the chocolate sets.
  5. Sprinkle a few festive sprinkles onto the still-melted chocolate for decoration.
  6. Press a marshmallow half onto the chocolate, pressing gently so it adheres. Repeat for each pop.
  7. Refrigerate the tray for 10–15 minutes to allow the chocolate to harden and the pops to set.
  8. Once firm, remove from the refrigerator. If you’re not serving right away, wrap each pop in a small clear bag and tie with a ribbon to keep them fresh.
