Instructions
- In a large heavy pot over medium-low heat, melt the butter.

- Pour in the chicken broth, bring the mixture to a boil, then reduce the heat. Cover and simmer until the asparagus is very tender, about 20–25 minutes.
- Remove the pot from the heat. Using an immersion blender or working in batches with a countertop blender, purée the soup until smooth and silky. If the soup seems too thick, add a bit more broth or water to reach your desired consistency.
- Taste and adjust seasoning with kosher salt and freshly ground black pepper.
- To serve, divide the soup among five bowls. Add about 1 teaspoon of crème fraîche to each bowl and garnish with chopped chives if desired.
