Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Peel and pit the mangoes, then puree the flesh in a blender or food processor until smooth. Measure out one cup of purée.
  3. In a large bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking soda, cinnamon, and salt until evenly combined.
  4. Stir in the chopped walnuts and coconut flakes so they are distributed through the dry mixture.
  5. In a separate medium bowl, whisk the beaten egg with the melted butter and the mango purée.
  6. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix—stop when there are no large streaks of flour.
  7. Pour the batter into a greased or lined 9 x 5-inch loaf pan, smoothing the top lightly.
  8. Bake at 325°F for 45–55 minutes, or until the loaf is golden and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  9. Allow the bread to cool in the pan for about 10 minutes, then remove it to a wire rack to cool completely before slicing.
