This recipe is essentially a deconstruction of jalapeño poppers—rolled up and tucked inside chicken cutlets. The flavors are the same, but the presentation feels heartier. The recipe has been updated to include air fryer directions if you’d prefer a quicker, evenly crisp method.

Variations and Tips

  • Swap panko for the breadcrumbs if you want an extra-crispy crust.
  • Make it gluten-free by using gluten-free breadcrumbs or panko.
  • For a milder dish, remove the jalapeño seeds and membranes before chopping.
  • If you love heat, leave the seeds and membranes in for extra spice.
  • To save time, prepare the filling ahead and refrigerate until ready to assemble.
  • If desired, substitute cooked turkey bacon or omit bacon for a lighter version.

Ingredients

  • 2 slices center-cut bacon, cooked and crumbled
  • 3 jalapeños, chopped (remove seeds for milder)
  • 3 oz (about) 1/3 less fat cream cheese, softened
  • 4 oz reduced-fat shredded cheddar-jack
  • 2 tbsp chopped scallions
  • 8 thin-sliced skinless chicken breast cutlets (about 3 oz each)
  • 1/2 cup Italian seasoned whole wheat breadcrumbs (or gluten-free crumbs)
  • Juice of 1 1/2 limes
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper
  • Olive oil non-stick spray

Instructions

  1. Preheat the oven to 450°F (230°C). Pat the chicken cutlets dry and season both sides lightly with salt and pepper. Lightly spray a baking dish with non-stick spray.
  2. In a medium bowl, combine the softened cream cheese, shredded cheddar-jack, chopped scallions, chopped jalapeños, and crumbled bacon. Mix until evenly combined.
  3. Lay the chicken cutlets flat on a work surface. Spread about 2 tablespoons of the cream cheese mixture onto each cutlet, leaving a small border around the edges.
  4. Loosely roll each cutlet into a log and secure the seam and ends with toothpicks to keep the filling inside during cooking.
  5. Place the breadcrumbs in a shallow bowl. In a second shallow bowl, whisk together the olive oil, lime juice, a pinch of salt and a grind of black pepper.
  6. Dip each rolled chicken piece into the lime-oil mixture, then coat evenly with breadcrumbs. Place the rolled, breaded breasts seam-side down in the prepared baking dish.
  7. Lightly spray the tops of the breaded chicken with olive oil spray to help browning. Bake in the preheated oven for 22–25 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the crust is golden. Remove toothpicks before serving.
  8. Let the chicken rest for a couple of minutes, then slice or serve whole. These pair well with rice, a simple salad, or roasted vegetables.

Air Fryer Directions

Follow steps 1–7 above. Air fry in batches at 400°F (200°C) for about 12 minutes, turning once halfway through, until golden and cooked through. Timing may vary by air fryer model—check internal temperature for doneness.

Notes & Serving Suggestions

If you prefer less assembly, you can prepare the filling ahead and refrigerate until ready to roll. If you want extra crispness, use panko breadcrumbs. For a lower-sodium option, use reduced-sodium bacon or omit the bacon entirely. Serve with lime wedges for extra brightness.
