Skinnytaste Dinner Plan (Week 51). This week falls during Thanksgiving, and I feel truly grateful. I’m thankful for family, for the health of my children, and for all of you who follow Skinnytaste. Because of your support I get to do what I love and share recipes that help busy families eat well. I wish you and your loved ones a healthy, peaceful, and happy Thanksgiving.

To keep our week organized I use a meal planner to map out dinners and the grocery list. Planning meals ahead saves time at the store and keeps weeknight cooking manageable. Breakfasts in our household tend to be simple and quick: eggs with fruit, a smoothie, or avocado toast. We’re a family of four; when a recipe makes extra it’s usually packed for lunches or enjoyed as leftovers the next day. Below is the plan for the week, with a short note on each day’s dish so you know what to expect.

Monday: Slow Cooker Blissful Butternut Squash Soup

Tuesday: Thai Chicken Peanut Lettuce Tacos
Light and fresh, these lettuce tacos combine seasoned ground chicken with a tangy peanut sauce, crunchy vegetables, and herbs for satisfying handheld dinners. They’re quick to assemble and a great way to sneak extra veggies into a weeknight meal.

Wednesday: Healthy Salmon Quinoa Burgers
Flavorful salmon and quinoa patties provide a nutritious, protein-packed dinner option. Serve the burgers on greens or whole-grain buns with a bright grapefruit and arugula salad for balance and color.

Thursday: Thanksgiving at Mom’s! Bringing appetizers plus Brussels Sprouts Gratin and Mini Pecan Phyllo Tarts
For Thanksgiving we’ll contribute a couple of crowd-pleasing sides: a rich, cheesy Brussels sprouts gratin and bite-sized pecan phyllo tarts for dessert. These dishes are easy to transport and pair well with the holiday spread.

Friday: Leftovers! Leftover Turkey and Sweet Potato Frittata and Leftover Turkey Noodle Soup
The day after Thanksgiving is perfect for transforming holiday leftovers into simple, comforting meals. A frittata makes a quick breakfast-for-dinner or light supper, and a turkey noodle soup is a nourishing way to stretch leftover turkey into a pot of comfort.

Saturday: Dinner Out
A night off from cooking to enjoy a meal out or socialize. Leaving one evening open gives everyone a break and keeps the week flexible.

Sunday: Turkey Pot Pie Soup
A cozy, savory soup inspired by pot pie flavors — hearty vegetables, tender turkey, and a creamy broth. It’s a satisfying way to wrap up the week and use any remaining holiday turkey.
