Ingredients

  • 1 large egg
  • 1 slice sourdough bread (about 1 ounce)
  • Olive oil spray or a light brush of olive oil
  • 1 ounce halloumi cheese, cut into 1/4-inch slices
  • 1 ounce avocado, thinly sliced
  • 2 tablespoons sliced roasted red pepper (about 1/4 small pepper)
  • 1 tablespoon microgreens
  • 1/2 teaspoon sunflower seeds
  • Pinch kosher salt and freshly ground black pepper, to taste

Instructions

  1. Make the 7-minute egg: Bring a small pot of water to a rolling boil over high heat. Carefully lower the egg into the boiling water and cook for 7 minutes. Remove the egg with a slotted spoon and plunge it immediately into a bowl of ice water to stop the cooking. Set aside.
  2. Toast the sourdough to your preferred doneness.
  3. Heat a small skillet over medium heat and lightly spray or brush with olive oil. Add the halloumi slices and cook for about 45 seconds until golden, then flip and cook an additional 30 seconds on the other side until browned and warmed through.
  4. Peel the cooled egg and slice it in half.
  5. To assemble: place the seared halloumi on the toasted bread. Layer with roasted red pepper slices and avocado. Top with the halved soft-boiled egg, microgreens, sunflower seeds, and a pinch of salt and pepper. Serve immediately.
