Instructions

Make the dough

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with a silicone mat or parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder and salt until evenly combined.
  3. Add the Greek yogurt and mix with a fork or spatula until the mixture forms small crumbles and comes together.
  4. Turn the dough out onto a lightly floured surface. Knead it a few times (about 20 turns) until smooth and pliable. The dough should be tacky but not sticky—if it sticks to your hands, dust lightly with more flour.

Assemble the rolls

  1. Divide the dough into four equal pieces (about 3-3/8 ounces or roughly the size of small dough balls).
  2. Lightly flour a work surface and a rolling pin. Roll each ball into a thin round about 7 inches in diameter.
  3. Spread about 1 tablespoon of marinara sauce down the center of each round in a strip. Top the sauce with approximately 2 ounces (1/2 cup) sliced grilled chicken, an additional tablespoon of marinara, and 3 tablespoons of shredded mozzarella.
  4. Fold one side of the dough over the filling, then fold the opposite side over to enclose the filling, forming a sealed roll.
  5. Place the rolls seam-side down on the prepared baking sheet. Brush each roll with the beaten egg and sprinkle with sesame seeds if using.

How to Store and Reheat

Store leftovers in an airtight container in the refrigerator for 3–4 days. These rolls freeze well after baking. To reheat, thaw overnight in the refrigerator and warm in a 350°F oven for about 5–10 minutes, or bake from frozen and add extra time until heated through and crispy.
