The rice cooks under high pressure for just a few minutes, then is tossed with lime juice, chopped cilantro, and a little oil for that signature tangy finish. It’s ideal for weeknight dinners, meal prep, and whenever you want a restaurant-style rice at home.

Pressure cooking rice cuts the time and uses less water than stovetop methods while still producing fluffy grains. There’s no need to rinse the rice unless you prefer to—unrinsed rice works well in this recipe. Ingredients
- 1 cup long-grain white rice or jasmine (unrinsed)
- 1 1/4 cups water
- 2 teaspoons olive oil, divided
- 1 teaspoon kosher salt
- Juice of 1/2 lime (more to taste)
- 1/4 cup fresh cilantro, chopped
Instructions
- Add the rice, water, 1 teaspoon of the olive oil, and the salt to the Instant Pot inner pot. Stir gently to combine.
- Close the lid and set the pressure valve to sealing. Cook on high pressure for 3 minutes.
- When the cooking cycle ends, let the pressure release naturally for 10 minutes, then carefully perform a quick release to remove any remaining pressure. Open the lid and fluff the rice with a fork.
- In a medium bowl, whisk together the remaining 1 teaspoon olive oil, lime juice, and chopped cilantro. Add the warm rice and toss gently until thoroughly combined. Taste and add more lime or salt if desired.
Notes
For brown rice, cook 23 minutes on high pressure and allow a natural release.
