Za’atar Roasted Carrots and Chickpeas
I’ve been enjoying more meatless meals recently because vegetables simply taste great roasted. Carrots develop a lovely caramelized sweetness in the oven, and when you add roasted chickpeas and a sprinkle of za’atar, the combination becomes especially delicious. Serve this over full-fat Greek yogurt for a creamy base and add massaged kale for a tender, lemony crunch.

For the yogurt base I used organic, whole-milk Greek yogurt because its creaminess pairs beautifully with roasted vegetables. Full-fat yogurt delivers a richer mouthfeel and complements the roasted carrots without tasting overly tangy. Chickpeas provide fiber and plant-based protein while Greek yogurt adds additional protein and creaminess—together they make this bowl filling and nutritious.

Tips & Variations
- Yogurt: Full-fat Greek yogurt is recommended for richness, but low-fat or fat-free Greek yogurt works if you prefer fewer calories.
- Carrots: Multicolored baby carrots or thin farmers’ market carrots are ideal. If using large carrots, halve them lengthwise so they roast evenly.
- Kale: Lacinato (dinosaur/Tuscan) kale is slightly more tender, but curly kale is a good substitute. Massaging raw kale with olive oil, lemon juice, and a pinch of salt softens it and reduces bitterness—massage for 1–2 minutes until it darkens and becomes pliable.
- To serve: These yogurt bowls can be enjoyed as a vegetarian main or a side. They pair well with grilled or roasted meats if you want to add a protein on the side.
Feel free to adjust the za’atar amount to taste and finish the bowls with crumbled feta, extra lemon zest, or a drizzle of good olive oil. The contrast of warm, roasted vegetables against cool yogurt is a highlight of this dish.
What is Za’atar?
Za’atar is a fragrant Mediterranean spice blend typically made from dried thyme, sumac, sesame seeds, and salt; variations may include oregano or marjoram. Sumac gives za’atar its tart, lemony note which brightens roasted vegetables and legumes.
How to Make Za’atar
If you don’t have za’atar on hand, make a quick blend by combining 1 tablespoon each of sumac, dried thyme, and toasted sesame seeds with 1 teaspoon of salt. Taste and adjust seasonings to suit your preference.


Ingredients
- 16 small heirloom baby carrots (about 16 oz), washed, dried and trimmed
- 1 (15 oz) can chickpeas, rinsed and drained
- 3 tablespoons olive oil, divided
- 2 teaspoons za’atar spice blend
- 1/4 teaspoon kosher salt, plus extra to taste
- Freshly ground black pepper, to taste
- 1 ounce crumbled feta (optional)
- 1 teaspoon lemon zest
- 1 lemon (juice divided)
- 1/2 bunch kale (preferably lacinato), ribs removed and discarded
- 1/2 tablespoon freshly squeezed lemon juice
- 2 cups full-fat Greek yogurt
Yield & Time
Yield: 4 servings. Prep time: 10 minutes. Cook time: 45 minutes. Total time: about 1 hour.
Instructions
- Preheat the oven to 350°F (175°C). Lightly oil a large sheet pan or line it with parchment paper.
- Dry the rinsed chickpeas thoroughly on paper towels so they roast rather than steam.
- Arrange the carrots and chickpeas on the prepared sheet pan. Drizzle with 2 tablespoons of olive oil, then sprinkle with za’atar, 1/4 teaspoon salt, and freshly ground black pepper. Toss to coat evenly.
- Roast until the carrots are crisp-tender and beginning to brown, about 40–45 minutes, turning halfway through for even caramelization.
- While the vegetables roast, thinly slice the kale into 1/4-inch ribbons and place in a large bowl. Add 1/2 tablespoon olive oil, 1/2 tablespoon lemon juice, and a pinch of salt. Massage the kale with your hands for 1–2 minutes until it softens and darkens in color.
- Divide the Greek yogurt among four shallow bowls, spreading about 1/2 cup in the bottom of each bowl.
- When the carrots come out of the oven, transfer them while hot over the yogurt. Season with additional lemon zest and a squeeze of lemon juice to taste.
- Scatter roasted chickpeas over the bowls, drizzle with the remaining olive oil if desired, top with the massaged kale and crumbled feta, and finish with extra black pepper or za’atar if you like.
