Instructions

  1. Preheat the oven to 400°F (200°C).

While the sweet potatoes are roasting, whisk the dressing ingredients together in a large mixing bowl: 2 tbsp olive oil, 1 1/2 tbsp apple cider vinegar, 1 tsp honey (or maple), 1 tsp salt, 1 tsp cumin and 1 tsp curry powder. Add the thinly sliced red onion to the dressing so the onion softens slightly and takes on flavor.
  6. When the roasted sweet potatoes come out of the oven, immediately add them, while still hot, to the bowl with the dressing and onions. Toss gently and allow the potatoes to cool slightly and absorb the dressing flavors.
  7. Once slightly cooled, fold in the sliced red bell pepper and baby spinach. Toss just until the spinach wilts slightly from the warmth of the potatoes.
  8. Divide the salad evenly among four plates and serve warm or at room temperature.
