Skinnytaste Dinner Plan (Week 16)
Happy Saturday! I was away in Jamaica last week for a fun family vacation, and now I’m back and glad to be back in my kitchen. This is week 16 of my ongoing weekly dinner plans. I use The Skinnytaste Meal Planner to map out dinners for the week, though any meal planner will work equally well.
Skinnytaste Dinner Plan (Week 16)

This planner is a 52-week meal planner that also serves as a food and exercise tracker, making it convenient to plan ahead and stay organized. I have included the SmartPoints next to each recipe because I’m currently tracking points on Weight Watchers. Meal planning is a practical way to reduce stress around dinnertime and make grocery shopping more efficient. My breakfasts tend to be quick and simple—eggs with fruit, a smoothie, or avocado toast—so I typically focus the meal planner on lunches and dinners. We’re a family of four; when recipes yield extra portions they either become packed lunches or are enjoyed as leftovers the next day. Monday: Veggie Lasagna Stuffed Portobellos — meatless Monday idea that is hearty and full of vegetables. These stuffed portobellos make a satisfying vegetarian main and pair nicely with a simple green salad or steamed vegetables.

Tuesday: Crock Pot Chicken alla Criolla served with brown rice. This slow-cooked dish is flavorful and convenient for busy evenings; the crock pot softens the chicken and infuses it with the sauce.

Wednesday: Crock Pot Minestrone Soup — makes a generous batch with plenty for leftovers, which is ideal midweek. Serve with crusty bread for dipping or a light side salad to round out the meal.

Thursday: LEFTOVERS — a simple, low-effort night to use up anything remaining from earlier in the week. Leftovers help reduce food waste and save time on busy evenings.
Friday: Flounder Milanese with Arugula and Tomatoes — a light, crisp fish dish that is quick to prepare. Pair with a lemon wedge and a side of steamed vegetables or a whole-grain side if desired.

Saturday: Date night out — a break from cooking and a chance to enjoy an evening out.
Sunday: Penne with Chicken Sausage, Escarole and Beans — a comforting pasta dinner with protein from chicken sausage and beans and a dose of greens from escarole. It’s a satisfying way to close the week.

This weekly plan balances convenience with freshness, aiming to minimize time in the kitchen while keeping meals flavorful and family-friendly. Using a slow cooker for two recipes this week frees up time for other tasks and makes evenings more relaxed. When planning, I also check pantry staples like olive oil, garlic, and spices so I can avoid last-minute runs to the store. If you prefer to batch-cook, many of these dishes reheat well and can be portioned for lunches or frozen for later use.
