Happy Saturday — welcome to week 13 of my weekly dinner plans. I used to post these on Sundays, but since many readers shop on Saturdays I’m switching to Saturdays going forward. My goal with these plans is to give you simple, realistic dinner ideas that make weekday cooking easier and help you stay organized before heading to the store.

I’ve included a sample week from The Skinnytaste Meal Planner — a year-long meal planner that combines meal scheduling, food tracking and exercise tracking. For convenience, I’ve listed the SmartPoints values next to each recipe because I’m currently following Weight Watchers. If you’re new here: I usually eat quick breakfasts like eggs with fruit, smoothies or avocado toast. We are a family of four, so when a recipe yields extra servings those portions become packed lunches or leftovers for the next day. Meal planning saves time and reduces stress during the week — it also helps minimize food waste and makes grocery shopping quicker.

Weekly Dinner Plan

  • Monday: Spinach Stracciatella Soup with Orzo — 4 SP. Serve with 1 oz whole wheat crusty bread — 2 SP.
  • Tuesday: No-Bean Turkey and Sweet Potato Chili — 5 SP. Pair with baked chips for a crunchy side.
  • Wednesday: Blackened Salmon with Mango Salsa — 4 SP. Serve with quinoa; cook a plain fillet for anyone who prefers it without seasoning.
  • Thursday: Crock Pot Kalua Pork — 6 SP. Serve as lettuce wraps for a lighter presentation.
  • Friday: Leftover Kalua Pork — 6 SP. Serve over 3/4 cup brown rice with hot sauce and 1 oz avocado — 6 SP total.
  • Saturday: Dinner out — enjoy a night off from cooking.
  • Sunday: Pork Chops with Mushrooms and Shallots — 6 SP. Add a house salad on the side — roughly 3 SP when dressed lightly.

Tips and variations: you can scale recipes up or down depending on how many people you’re feeding. When a recipe makes more than we need, I pack the extras for lunches or freeze portions for a quick meal later in the month. For the salmon night, reserve a plain piece if someone in the family prefers milder flavors. For the chili and soups, leftovers can be portioned into single-serve containers for an easy grab-and-go dinner or lunch.

Meal prep ideas for the weekend: chop vegetables for the week, cook a batch of quinoa and rice, and portion out snacks so evening cooking is just assembly and reheating. Simple steps like washing and drying greens, slicing onions, or pre-roasting sweet potatoes will make weekday dinners much faster.

Meats

  • 20 oz 93% lean ground turkey
  • 1 lb (about 4 pieces) wild salmon fillet, skin on
  • 2–3 lb trimmed pork shoulder or blade roast
  • 4 pork loin chops (bone-in) or 1 lb boneless pork chops

Dairy & Eggs

  • 2 large eggs
  • Freshly grated Parmesan cheese
  • Butter

Notes: adjust quantities to match your household size and preferences. For lower SmartPoints versions, reduce added oils, serve more vegetables, or swap grains for extra greens.
