Roasted Cauliflower and Chickpeas with Mint Yogurt Recipe

Roasted Cauliflower and Chickpeas with Minted Yogurt

Roasted Cauliflower and Chickpeas with Minted Yogurt

Roasting transforms humble ingredients into something special. In this recipe, cauliflower and chickpeas are tossed with curry and olive oil, then roasted until golden and slightly crisp. A cool, bright minted yogurt contrasts beautifully with the warm vegetables—zesty lemon zest and a touch of sugar in the yogurt round out the flavors and create a satisfying balance of savory, sweet, and fresh.

If you’ve ever tried to sauté chickpeas, you know they can be messy and unpredictable—moisture causes them to pop and scatter. Roasting is simpler and gives a better texture: crunchy outside, tender inside. This version is lighter than many decadent alternatives but keeps the punchy flavors I love from Indian-inspired dishes. It makes a great vegetarian main for lunch, a flavorful side for dinner, or a component in bowls and salads.

Guest author Jackie Ourman (CAFE Celiac & Allergy Friendly Epicurian) and I tested this recipe together while photographing it, and we both loved the results. I added a clove of fresh garlic to the yogurt for extra depth, but that is optional if you prefer a cleaner, mint-forward flavor. This recipe is naturally gluten-free, easy to scale, and quick enough for weeknight cooking.

Recipe Summary

Ingredients

  • Cooking spray
  • 1 medium head cauliflower, cut into bite-sized florets (about 6 cups)
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 ½ tablespoons olive oil
  • 1 teaspoon curry powder
  • Kosher salt and freshly ground black pepper, to taste
  • ½ cup nonfat Greek yogurt
  • 2 tablespoons chopped fresh mint
  • ½ teaspoon sugar
  • ½ teaspoon lemon zest

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with foil and lightly coat with cooking spray.
  2. In a large bowl, combine the cauliflower florets and drained chickpeas. Add the olive oil, curry powder, and a pinch of kosher salt and freshly ground black pepper. Toss until everything is evenly coated.
  3. Spread the cauliflower and chickpeas in a single layer on the prepared baking sheet. Roast for about 30 minutes, tossing once halfway through, until the vegetables and chickpeas are golden and slightly crisp at the edges.
  4. While the cauliflower roasts, whisk together the Greek yogurt, chopped mint, sugar, and lemon zest in a small bowl. Season with salt and pepper to taste. If you like, stir in one small clove of minced fresh garlic for a more savory yogurt.
  5. To serve, spoon a layer of minted yogurt onto each plate or shallow bowl, then pile the warm roasted cauliflower and chickpeas on top. Garnish with a little extra mint or a light drizzle of olive oil if desired.

Tips and Variations

  • For extra-crispy chickpeas, spread them out so they don’t overcrowd the pan. If they steam, they won’t crisp as well.
  • Swap the curry powder for smoked paprika and cumin for a different but equally delicious spice profile.
  • Make it vegan by using a dairy-free yogurt alternative; coconut- or almond-based yogurts work best if they’re thick.
  • Add roasted red pepper, sliced cherry tomatoes, or toasted nuts (almonds or pistachios) for additional texture and color.
  • If you want more heat, mix a pinch of cayenne or a drizzle of chili oil into the yogurt or sprinkle crushed red pepper over the finished dish.

Serving Suggestions

This roasted cauliflower and chickpea dish pairs well with grain bowls, served over rice, quinoa, or bulgur. It’s also excellent alongside grilled fish or chicken, or as part of a mezze spread with pita and roasted vegetables.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat the cauliflower and chickpeas in a hot oven (about 400°F) for 8–10 minutes to help restore some crispness, then serve with fresh minted yogurt. The yogurt can be stored separately to keep its texture fresh.
