How To Make Fruit Roll Ups

Total oven time is about 2 1/2 to 3 hours, depending on your oven and how thickly the puree is spread.

Ingredients

  • 1 large ripe mango, peeled and chopped
  • 6 ounces fresh raspberries
  • 2 tablespoons sugar (adjust to taste)

Instructions

  1. Preheat the oven to 150°F (about 65°C). Line a rimmed half-sheet pan (approximately 12½ by 17¼ inches) with a silicone baking mat or parchment paper.
  2. In a blender or food processor, blend the chopped mango until smooth. Transfer the mango puree to a bowl and set aside.
  3. Add the raspberries and sugar to the blender and puree until very smooth. The sugar helps the raspberries liquefy and creates a smoother texture.
  4. Place spoonfuls or dollops of mango and raspberry purees onto the prepared pan. Using a small offset spatula, spread the purees evenly across the pan. Aim for an even layer that’s not too thin or thick; leave a small border at the edges so you can lift the fruit leather off the mat when cool.
  5. Bake in the preheated oven for 2 hours and 30 minutes to 3 hours, rotating the baking sheet every hour for even drying. The fruit leather is done when it feels tacky but not wet or overly sticky.
  6. Allow the fruit leather to cool completely. Carefully peel it from the mat and place it on a sheet of wax paper. Use scissors to cut the leather and wax paper into strips, then roll the strips with the wax paper on the inside (paper-side out).
  7. Store the rolled fruit leathers in a sealed container at room temperature for up to 1 week. If you want to extend freshness, refrigerate them in an airtight container.

Variations and Serving Suggestions

Try other fruit combinations: strawberries, blackberries, peaches, or pear work well. You can omit added sugar if your fruit is very ripe and sweet, or substitute a small amount of honey or maple syrup if preferred. For layered color and flavor, alternate strips of different fruit purees and bake them together (keep layer thickness even).
