  1. Cook the chicken in the slow cooker: Place chicken, 1 celery rib, 1 clove garlic, and low-sodium chicken broth in the slow cooker. Add water if needed to just cover the chicken. Cook on HIGH for 4 hours or LOW for 6 hours.
  2. Shred the chicken: Remove the chicken, reserve ½ cup of the cooking liquid, discard or save the rest. Shred the chicken with two forks or with a stand mixer paddle on low.
  3. Add the hot sauce: Return the shredded chicken to the slow cooker with the reserved ½ cup broth and the hot sauce. Cook on HIGH for 30 minutes to meld flavors.

  • 12 oz boneless, skinless chicken breast or tenderloins
  • 1 rib celery and 1 clove garlic
  • 16 oz low-sodium chicken broth
  • 1/3 cup hot cayenne pepper sauce (buffalo sauce)
  • 12 tbsp shredded cheddar cheese
  • 1/2 cup carrots, cut into matchsticks
  • 1 large celery rib, cut into matchsticks
  • 1/4 cup blue cheese dressing (or ranch)

Instructions

  1. In a slow cooker combine chicken, celery rib, garlic, and broth to just cover the chicken. Cook on HIGH 4 hours or LOW 6 hours.
  2. Remove chicken, reserve 1/2 cup broth, shred the chicken, discard or save remaining broth. Return shredded chicken to the slow cooker with reserved broth and hot sauce. Cook on HIGH 30 minutes more.
  3. Cook potatoes by microwave (about 5 minutes each), oven, or air fryer until tender. Let cool, halve, and scoop out flesh leaving 1/4-inch of potato on the skins.
  4. If microwaved, spray skins with oil, season, and bake at 450°F for 10 minutes to crisp.
  5. Fill each skin with ~2 tbsp chicken, top with 1 tbsp shredded cheese, bake 5 minutes until cheese melts. Top with 1 tsp blue cheese dressing and carrot and celery matchsticks.

Notes
