Cottage Cheese Caprese Bowl

I developed this idea after trying the whole milk version of Good Culture cottage cheese, which I find exceptionally creamy and similar in texture to the inside of burrata. That inspired a caprese-style bowl using cottage cheese instead of fresh mozzarella. The result is a rich, protein-packed lunch that tastes bright and fresh, with the tomatoes adding a roasted, almost pizza-like finish when they’re burst or lightly roasted.

This bowl is versatile and fast: you can make quick burst tomatoes in an air fryer at 400°F for about 5–6 minutes, roast them on a sheet pan in the oven until tender, or skip cooking and use fresh tomatoes. The combination of cottage cheese, olive oil, balsamic glaze, salt, pepper, and fresh basil creates a balanced bite that feels indulgent without being heavy.

If you enjoy savory cottage cheese bowls, you can adapt this approach in many directions—add cucumbers, bell peppers or avocado for texture; top with nuts for crunch; or use smoked salmon and everything bagel seasoning for a bagel-style bowl.

How do you make cottage cheese taste good savory?

  • Fresh vegetables: Add ripe tomatoes, cucumber, bell pepper or sliced radish for freshness and crunch.
  • Season well: A good drizzle of extra virgin olive oil, flaky salt and freshly cracked black pepper transform the flavor. A touch of balsamic glaze adds sweetness and acidity.
  • Add texture: Toasted nuts such as sliced almonds or chopped pistachios, sunflower seeds, or crisp breadcrumbs give a pleasant contrast to the creaminess.
  • Herbs: Fresh basil, chives, parsley or mint brighten the bowl and add aroma.
  • Protein variations: For more savory depth, try smoked salmon, shredded roasted chicken, canned tuna, or a soft-boiled egg.

Burst Tomato Cottage Cheese Caprese Bowl — Recipe

Yield:

1 serving

Prep & Cook Time

  • Prep: 2 mins
  • Cook (if bursting tomatoes): 5–6 mins
  • Total: 7–8 mins

Ingredients

  • 1 cup Good Culture cottage cheese (I used whole milk; 2% works fine)
  • 1 cup grape or cherry tomatoes
  • 2 teaspoons extra virgin olive oil, divided
  • 1 teaspoon balsamic glaze
  • Fresh basil leaves for garnish
  • Pinch kosher salt
  • Black pepper, to taste

Equipment

  • Air fryer or oven (optional)
  • Mixing bowl

Instructions

  1. Season the tomatoes: In a medium bowl, toss the grape tomatoes with 1 teaspoon of olive oil and a pinch of kosher salt.
  2. Burst the tomatoes: Air fry at 400°F (200°C) for 5 to 6 minutes, shaking the basket halfway through, until the tomatoes start to burst and soften. Alternatively, roast them on a sheet pan at 400°F for 10–12 minutes, or use fresh tomatoes without cooking.
  3. Assemble the bowl: Spoon the cottage cheese into a serving bowl. Top with the burst tomatoes.
  4. Finish: Drizzle the remaining olive oil and the balsamic glaze over the bowl. Season with black pepper and an extra pinch of salt if needed. Garnish with torn fresh basil leaves and serve immediately.

Serving suggestions and variations

  • Make it heartier: Add a handful of cooked quinoa or a scoop of cooked farro for more fiber and bulk.
  • Make it Mediterranean: Add sliced cucumber, kalamata olives, and a sprinkle of dried oregano.
  • Bagel-style option: Top with smoked salmon, capers, and everything bagel seasoning.
  • Crunch factor: Scatter toasted nuts or seeds on top for texture.
  • Meal prep: Keep the cottage cheese and burst tomatoes separate in the fridge and assemble when ready to eat to retain texture. Consume within 2–3 days for best quality.
