Instructions

  1. In a medium heavy pot with a tight-fitting lid, heat 2 teaspoons of olive oil over medium heat. Sauté half the chopped onion, half the cilantro and half the garlic for about 2 minutes, until softened.
  2. Add the rice, bone broth and Sazón seasoning. Stir to combine, then bring to a boil over high heat. Stir once at this stage only.
  3. As the liquid comes up to the rice and begins to skim the top, reduce the heat to very low and cover. Cook undisturbed for 15 minutes so steam finishes cooking the rice—do not lift the lid.
  4. After 15 minutes, turn off the heat and let the pot sit, covered, for at least 5 more minutes. This resting step finishes the rice and prevents burning. Fluff with a fork once ready.
  5. While the rice cooks, heat the remaining 2 teaspoons of oil in a large deep skillet over medium heat. Add the remaining onion and the diced bell pepper; cook 2 to 3 minutes until softened. Add the remaining garlic and cook 1 minute more until fragrant.
  6. Add the shrimp and cook about 3 minutes, until they turn opaque and are cooked through.
  7. Transfer the cooked rice to the skillet with the shrimp. Stir in the Salsa Lizano and the reserved chopped cilantro. Mix gently until everything is evenly combined, then garnish with additional cilantro and serve warm.
