I love banana fritters but usually they are deep-fried and heavy. This lighter version keeps all the sweet banana flavor with far less fat by mashing ripe bananas into a simple batter and pan-frying small fritters with a light touch of buttery spray. They are almost like tiny banana pancakes—crispy at the edges, tender inside—and they pair beautifully with a small scoop of low-fat ice cream or a dusting of powdered sugar and cinnamon. Cooking them over low heat makes the texture more even and prevents the outsides from browning too quickly while the centers cook through.

Ingredients
- 3 medium, very ripe bananas
- 2 tablespoons sugar
- 2 large eggs, beaten
- 3 tablespoons all-purpose flour

Instructions
- Mash the bananas in a bowl until mostly smooth. Small lumps are fine and add texture.
- Add the sugar, beaten eggs, flour and vanilla extract to the mashed bananas. Stir gently until combined into a spoonable batter. Fold in the 1/2 teaspoon cinnamon.
- Preheat a large skillet over low heat. Using low heat helps the fritters cook through without burning on the outside.
- When the skillet is warm, lightly spray it with the buttered-flavored cooking spray. Using a tablespoon, drop small mounds of batter (about 1 tablespoon each) into the pan, spacing them so they do not touch.
- Cook the fritters on the first side for about 1 to 2 minutes, until the edges set and the bottom is lightly golden. Carefully flip each fritter and cook the other side until set and golden, about another 1 to 2 minutes.
- Transfer cooked fritters to a plate and keep warm in a low oven while you finish the rest. Repeat with remaining batter, spraying the pan as needed.
- To serve, place 4 fritters on a plate and sprinkle with a little powdered sugar and additional cinnamon. Serve warm, with a small scoop of low-fat ice cream or plain yogurt if desired.
