This BBQ Chicken Quesadilla is a delicious, family-friendly twist on a classic quesadilla. It pairs lean chicken breast tossed in tangy BBQ sauce with shredded reduced-fat Mexican cheese, red onion and fresh cilantro, all folded inside a high-fiber whole wheat tortilla for a satisfying, quick meal.

BBQ Chicken Quesadilla
Quesadillas are an easy go-to for lunch, weeknight dinners or an after-school snack. They’re quick to prepare, customizable, and a great way to stretch simple ingredients into a meal everyone enjoys. This BBQ Chicken Quesadilla keeps things simple: lean protein, bold BBQ flavor, melty cheese and a bit of crunchy onion and bright cilantro for contrast. Use leftover cooked chicken or quickly pan-sear a cutlet to make the filling in under 20 minutes.
I adapted this version from a recipe that highlights minimal main ingredients while maximizing flavor. The result is a balanced quesadilla that’s lower in calories than some restaurant versions but still delivers on texture and taste. For best results, choose a high-fiber large flour tortilla and a lower-calorie BBQ sauce if you are watching calories.
Variations and tips
- Save time by using shredded rotisserie chicken or leftover roasted chicken; coat it with BBQ sauce and proceed with the recipe.
- To make this gluten-free, use corn or gluten-free flour tortillas. Note that some gluten-free tortillas are smaller, so you may need two per quesadilla.
- Swap cheeses to vary the flavor: pepper jack adds a spicy kick, while a mild cheddar or Monterey Jack keeps it classic.
- Add slices of avocado or a spoonful of mashed avocado after cooking for creaminess and healthy fats.
- For extra char and smoky flavor, finish the cooked quesadilla briefly on a hot grill pan or under the broiler for 30–60 seconds—watch closely so it doesn’t burn.

Recipe: BBQ Chicken Quesadilla
Yield: 1 serving (1 quesadilla)
Prep: 5 mins • Cook: 15 mins • Total: 20 mins
Ingredients
- One 3-oz. raw boneless, skinless chicken breast cutlet
- 1/8 tsp garlic powder
- 1/8 tsp onion powder
- 1 tbsp BBQ sauce (choose a BBQ sauce with 45 calories or less per 2-tbsp serving), plus more for serving if desired
- 1 large high-fiber flour tortilla (110 calories or less; e.g., a high-fiber variety)
- 1/4 cup shredded reduced-fat Mexican-blend cheese
- 2 tbsp chopped red onion
- 1 tbsp chopped fresh cilantro
- Nonstick spray (for cooking)
Instructions
- Preheat a skillet over medium-high heat and coat it with nonstick spray. Season the chicken breast cutlet with garlic powder and onion powder.
- Cook the chicken about 4 minutes per side, until cooked through and no longer pink in the center. Remove from the pan and let cool slightly.
- When the chicken is cool enough to handle, chop or shred it roughly. Toss the chicken in a small bowl with 1 tablespoon of BBQ sauce to coat evenly.
- Lay the tortilla flat and spread the BBQ-coated chicken over one half of the tortilla. Sprinkle the shredded cheese over the chicken, then add the chopped red onion and cilantro.
- If needed, wipe the skillet clean, re-spray with nonstick spray and return to medium-high heat. Place the half-loaded tortilla in the skillet, cooking the loaded side for about 2 minutes.
- Use a spatula to fold the empty half of the tortilla over the filling and press lightly to seal. Carefully flip the quesadilla and cook until the tortilla is golden and crispy and the cheese is melted, about 2–3 minutes more.
- Transfer to a cutting board and slice into wedges. Serve immediately, with extra BBQ sauce on the side if desired.
