Tomato, Fresh Mozzarella & Roasted Pepper on Whole Wheat Bread
I live just two blocks from a wonderful Italian shop called Pastosa that sells homemade ravioli, fresh breads, house-made mozzarella and roasted peppers. Everything is displayed temptingly right in front of you, so it’s easy to wander in and come away with ingredients that immediately inspire a simple, delicious lunch.
For this sandwich I picked up a rustic whole wheat loaf, thin slices of fresh mozzarella, roasted red peppers and ripe tomatoes. At home I snipped a few basil leaves from the garden, sliced the cheese a bit thinner than usual (a great trick to control portion and let the other flavors shine), and assembled a sandwich that’s bright, balanced and quick to make.

Ingredients
- 3.25 oz whole wheat Italian or French bread (about one sandwich portion)
- 1 oz thinly sliced fresh mozzarella
- 1 oz roasted red peppers, drained and sliced if needed
- 3 slices ripe tomato
- 3 fresh basil leaves
- 1/4 tsp extra virgin olive oil
- 1 tsp balsamic vinegar
- Salt and freshly cracked black pepper, to taste
Instructions
- Slice the bread horizontally so you have a top and bottom.
- On the bottom half, layer the thin mozzarella slices first so they sit against the bread.
- Add the tomato slices, then the roasted red peppers. Tuck the basil leaves in between the layers so the aroma infuses the sandwich.
- Drizzle the olive oil and balsamic vinegar evenly over the toppings. Sprinkle with salt and freshly cracked black pepper to taste.
- Close the sandwich, press gently, slice if desired and serve immediately.
